You’ve tried banana bread but you have no idea what banana cake is? Banana cake is the fluffiest cousin of banana bread that no one knows. It is made when you have an excess of overripe bananas that you will not be able to eat while they are still edible.  Or if, you are like us and you do not like the taste of ripe spotted or already brownish bananas.

The classic recipe for banana cake includes eggs that combine everything into a compact and elastic mixture. This mixture is soft and moist but also very refreshing. This recipe for the banana cake is without milk and flour which makes it suitable for anyone who is gluten or lactose intolerant.

Another advantage is that this dessert also doesn’t require extra sugar.

The Simplest Banana Cake Recipe

For starters, you will need these ingredients:

– 1 ½ cups oatmeal (finely cut)
– 4 medium bananas (ripe)
– 2 tsp baking soda
– 4 eggs
– 1 cup raisins or any other dry fruit of your choosing
– 1 cup coconut oil or olive oil
– A pinch of cinnamon powder

Cooking instructions:

First, take a large bowl and add the eggs, bananas, and coconut oil. Then, turn your oven and preheat it to 180 degrees Celsius (350 F).  Mix the ingredients by hand with a fork and then transfer them into a food processor and pulse. The mixture should be homogeneous and combined nicely.

Next, add your dry fruit in the mixture and stir the batter with a wooden spoon. In the end, add the baking soda, oats, and cinnamon. Stir the mixture once more.

Line a baking tray with baking paper, and add the banana batter in it. Spread it evenly, and decorate it with chopped bananas on the top. After, take the baking tray and place it in the oven. Bake the banana cake for 35 minutes. When the time passed, you should do the toothpick check. You already know this step, take a toothpick and stick it in the cake. If the toothpick comes clean, your cake is done.

Remove the cake from the oven and let it cool off.  Gently peel off the baking sheet and place the cake on a clean plate. Cut a piece and top it off with a little bit of powdered nutmeg or even more cinnamon. This recipe is easy as it gets, you can also change it as you prefer. Add ground vanilla or even better make a delicious frosting, the options are endless.
