As a specialty for today, we recommend broccoli soup. Broccoli is easy to digest and is full of vitamins and minerals. Thus, this vegetable is suitable as an ingredient for a healthy and balanced diet. It helps the human body overcome the problems with digestion; reduces the potential of cataract formation; and helps reduce the nervousness and depressing mood.
If you love healthy eating, you’ll find this broccoli soup perfect for your taste! For the preparation, you’ll need the following ingredients:
- 500 gr of potatoes
- 2 large carrots
- 2 medium-sized broccoli
- 5 dl of milk
- 1 small teaspoon of salt
- ½ teaspoon of black pepper
Method of preparation
Wash and peel the potatoes, broccoli and carrots. Then cut them into pieces of any size.
Fill a cooking pot with water and bring it to boiling point (about 1 liter of water, sufficient to cover the vegetables). As soon as it boils, add the salt and chopped pieces of potatoes and carrots. Cook for 15 minutes, or until the vegetables soften.
When the potatoes and carrots are soft, add the sliced broccoli. The water in the cooking pot should be enough to cover the vegetables. Cook all ingredients for another 10 minutes.
Once all vegetables are cooked, pour out 1/3 of the water from the cooking pot. Then, add the black pepper and milk, and transfer the mixture in a food processor. Pulse until the ingredients combine and you get a nice runny paste.
Serve the broccoli soup hot, in deep plates or bowls. But, it’s also great if served cold.
Recommendation: Decorate it with a few pieces of toasted bread. Also, you can add a little bit of blue cheese and fresh dill. But, what’s my favorite, is to sprinkle a few toasted pumpkin seed, grate a little bit of Parmesan, and serve it with garlic bruschetta.
