When was the last time you prepare something with carob? Do you know what carob is, and that it’s very healthy? Read more about this amazing food, and make delicious muffins with it. Carob was used in ancient Egypt, and its seeds sometimes were used for weighing diamonds.
In addition to preparing meals, you can use carob as a remedy for a cough and sore throat. It is used as an important source of sugar before sugar beets, and today it is mostly used as a healthier substitute for chocolate and cocoa.
Why Should You Use Carob?
Carob has analgesic, anti-allergic, antibacterial and antiseptic properties and contains significant antioxidants. It improves digestion and lowers blood cholesterol levels. It is also used as a diuretic medicine.
It doesn’t contain caffeine, that why it is good for people with high blood pressure, who can use it in various beverages. Carob is rich in vitamin E, phosphorus, and calcium, and according to some studies, it helps prevent lung cancer. What is interesting about this food is that some singers chew the peel of the carob in order to purify the throat.
You can use it for preparation of cakes and pastries, but also ice cream, sauces, and dressings. However, you can also use it for the preparation of meat, fish, homemade mustard and, of course, as a substitute for cocoa and chocolate in pastries and cakes. You can also replace coffee with hot carob beverage.
Homemade Carob Muffins
We will give you an idea how to use carob in a very delicious dessert. For these soft and generous muffins, you need 30 minutes to prepare. From this dosage, you will get 12 large or 24 mini muffins.
- 320 grams of flour (any type)
- Two cups of mashed bananas
- One cup of milk
- Two beaten eggs
- Three tablespoons of powdered carob
- 1/2 teaspoon of cinnamon
- One tablespoon of plain yogurt
- 1/2 teaspoon of baking soda
- 150g melted butter, slightly chilled
- One teaspoon of vanilla extract
- A pinch of Himalayan salt
Preheat the oven to 400 F or 200C and butter the muffin molds.
Then mix the salt, flour, carob, baking soda and cinnamon in a bigger bowl. Afterward, add the butter, eggs, yogurt, milk, bananas and vanilla extract in the middle of the mixture. Mix with a wooden spoon until all the ingredients combine. Fill 2/3 of each mold with this mixture, and then bake it for about 20 minutes in the oven. Check your muffins so you don’t burn them. Remove them from the oven, let them cool down and serve.
