Lemon loaf is not a particularly fancy dessert. However, whenever it’s served on the table, it is rare to find someone that will refuse a plate of this cake. This loaf is at the same time creamy, full of flavor, and refreshing.
It’s a pretty simple recipe and it’s easy to make, so let’s begin with the recipe.
Creamy And Tasty Lemon Loaf Recipe
For this recipe you will need the following ingredients:
- 2 tbsp grated lemon zest
- 3 medium eggs
- 2 tbsp lemon extract
- ½ cup of oil (vegetable)
- 1 ½ cups of all-purpose flour
- 1 cup greek yogurt
- 2 tsp baking powder
- ¾ cup sugar (granulated)
- ½ tsp salt
For the icing
- 2 tbsp freshly squeezed lemon juice
- 1 cup of sugar (powdered)
First, line a 23cm X 13cm cooking tray with baking paper. Feel free to put a little more paper so that the cake does not stick to the sides. Next, turn the oven on and preheat it to 180 Celsius (350 Fahrenheit).
Then, take a large bowl and add the sugar and eggs. Whisk these ingredients so they can combine nicely. After, add the oil and yogurt in the bowl as well. Mix once again, so you can get a homogenous mixture. Then, add the lemon extract and lemon zest in the bowl and stir the ingredients.
Next, take another bowl and in it add the flour, salt, and baking powder. Mix the ingredients well. In the end, pour the dry ingredients into the wet ones. Take a wooden spoon and stir the mixture well. Now you’ve made the batter for the cake. Pour the lemon batter into the cooking tray and spread it evenly. Place the cooking tray into the oven and bake for about 50 minutes. You should check the lemon cake with a toothpick. If the toothpick comes out clean your cake is ready. To avoid burning the top of your cake you can put some aluminum foil for about 10 minutes before you remove it from the oven.
Once it is baked remove the cake from the oven and let it cool off. Now, you can prepare your lemon icing. In a small bowl, mix the sugar and lemon juice until you get a smooth combination. With the help of a spoon carefully spread the glaze on top of your cake. Leave the cake in the fridge for an hour, so the glaze tightens. And voila, your lemon loaf is ready to be served. Cut a slice and serve it with a cup of coffee or tea.
