Delicious Sugar-Free Beetroot Cookies Suitable For Diabetics And Weight-Watchers

Sweet beetroot biscuits? Sounds impossible. But, it is possible. Beetroot is a very healthy ingredient and you should include it in your daily diet. We bring you a sweet recipe that will convince you that beetroots can be part of a delicious dessert.

For beetroot, people say that it is able to fix what is broken in your body. Today it is considered the most useful and the most effective vegetable, which contains the widest variety of vitamins and minerals, it is extremely rich in proteins, fats, and carbohydrates and, importantly, it digests easily.

Beets contain almost every mineral needed: calcium, sodium, potassium, magnesium, phosphorus, fluorine, iron, manganese, copper, sulfur, iodine, bromine, strontium, etc.

It also contains vitamins B1, B2, C as well as an extremely rare vitamin in plant foods, B12. The red color of the beet comes from an anthocyanin that affects blood regeneration, while the plant itself acts anti-cancerous.

Let’s return to our sweet recipe.

Beetroot-Coconut Cookies

One medium-sized peeled beet (chopped)

  • 180 ml of Greek yogurt or cream with less fat
  • 3/4 cup whole-grain flour
  • One tablespoon of baking powder
  • 8 tablespoons of shredded coconut (unsweetened)
  • One egg
  • One tablespoon of vanilla extract
  • One tablespoon of raspberry or any other extract of your choosing (optional)
  • Optional: you can add one teaspoon stevia powder

Topping

  • 4 tablespoons of coconut flakes
  • 100 grams of dark chocolate ( grated)

Preparation:

Warm up the oven to 180C. Take one baking pan and cover it with a baking sheet. Then, in a bowl mix the egg, extracts, and beet and add them in a food processor until you finely chop all the pieces of beet. Add the yogurt (or cream) in the mixture and pulse until all of it is united.

Mix the flour with baking powder in another bowl, and add to the wet beet mixture along with the shredded coconut. Put the mixture in the freezer for 15 minutes to make it easier to handle. Remove the mixture from the freezer, and then form balls of diameter about 2.5 cm. Afterward, sprinkle the coconut flakes and grated chocolate on top of each ball.  Place the baking pan in the oven and bake the beet cookies for 10 minutes. You can decorate the cookies with dark chocolate almonds or hazelnuts in the middle but before baking, you should press a hole with your fingers.  Leave them to cool down and serve.
