Dark Chocolate Morning Cookies
For this recipe you will need:
- 1 cup of peanut butter (you can use homemade peanut butter)
- 2 tablespoons of honey or 10 tablespoons of coconut sugar
- Half a teaspoon of vanilla extract
- ¼ cup of organic cocoa powder
- 1 teaspoon baking soda
- 1 egg
- 8 tablespoons of grated dark chocolate + dark chocolate chips
- A pinch of Himalayan salt
Turn the oven on to heat up to 175 degrees Celsius. Then, take a clean bowl and in it mix the peanut butter, vanilla extract and honey.
Mix in another bowl the cocoa powder, salt, and baking soda. Transfer this blend into the first bowl and mix once again. Afterward, beat the egg in a smaller dish and mix it with other ingredients. In the end, add the shredded dark chocolate to the mixture.
Then, stir all the ingredients well, so they combine nicely.
Form small balls from the resulting mixture, and place them in a pan covered with baking paper. Sprinkle a few dark chocolate chips on top of each ball and press the balls slightly with your hands. Place the pan in the oven and bake the cookies for about 6-8 minutes because they can quickly burn. After six minutes, check if they are ready.
Allow the cookies to cool and store them in a plastic container. Serve them for breakfast with your morning coffee or tea to boost your energy levels through the day.
