For the preparation of this ginger-garlic soup, you’ll need the following ingredients.
– 1 ½ inch fresh ginger root
– 20 garlic cloves
– 3 medium-sized onions
– 3 medium-sized tomatoes
– A pinch of black pepper
– Salt to taste
– A handful of green beans
Peel and clean the ginger root and onions. Roughly chop them, along with the tomatoes, and put them in a cooking pot. Add the garlic and 2 cups of water. Bring the mixture to boiling point. Then cover the pot, reduce to medium heat, and allow it to simmer until the vegetables have softened.
Turn off the stove and allow the soup to cool down. Next, blend the ingredients with a hand blender. If you don’t have one, you can use a food processor or a regular blender.
Return the ginger-garlic soup into the cooking pot, and add the green beans, roughly chopped parsley, black pepper, and salt. Cook for another 6 minutes, until the green beans are tender but still crisp. Serve it hot!
