You forgot to buy mozzarella cheese, and you need it for the dinner you are preparing? Do not panic, you can do it yourself in only 30 minutes. If you think the process of making mozzarella cheese is a long-lasting and painstaking job and that’s why you’re avoiding it, there is a recipe that will convince you otherwise.
If somebody told us that it was possible to make cheese in half an hour, we would not believe him/her. But it’s possible and here’s the recipe for it.
How To Make Homemade Mozzarella Cheese
You will need the following ingredients:
- 3,8 liters (1 gallon) of milk
- ¼ teaspoons of liquid rennet
- 1 ½ teaspoon of citric acid powder
- 1 teaspoon of kosher salt
First, pour the milk into a pot and heat it on medium temperature, until it reaches a temperature of 12C. For this step, you will need a kitchen thermometer. When the milk has reached the correct temperature, add the citric acid powder, and mix well but continue to heat the milk (don’t remove it from the stove).
When the milk is warmed to a temperature of 31C, add the liquid rennet and mix thoroughly once again. You will notice that the milk starts to thicken slightly, and little lumps appear in it which are completely normal. Between 35-40C temperature, the milk will be quite thick and it is time to turn off the stove.In the process, the whey will separate from the lumps of cheese. Remove the pot from the stove and let it cool off for five minutes. Then, with the help of a spoon, remove all the curd (cheese) into a special bowl and strain the excess whey as much as possible. After that, put cheese in a microwave oven to heat for 60 seconds, drain whey remains again and fold the curd a couple of times so the heat is evenly distributed, as you knead a dough.
After this, return the cheese back to the microwave and heat it for 30-40 seconds depending on the microwave strength. Afterwards, remove the excess whey again.
Add a little bit of salt on the cheese and fold it again and then return to the microwave for additional 30-40 seconds. Once again remove the whey from the pan.
After this process, the cheese will be very hot and resembles of mozzarella. Next, put gloves on your hands, and stretch it once or twice as much as you can. If the layers of cheese aren’t hot enough they will tear apart when stretched. If this happens, return the cheese in the microwave until all its layers of are equally hot. After that, you can make small balls, loaf or braids from the cheese. Keep the mozzarella cheese in cold water and in the fridge.
